This is my last recipe for Publix and Pork Be Inspired and boy was it easy and yummy! This was probably the hardest one I had to choose as well because each of our choices looked great. But since I just started a new job and getting dinner on the table has been a struggle I decided to go with one of the easiest and chose Beer Braised Pork Cutlets. Pork Cutlets are on sale this week at Publix and because I had almost all the staples the meal cost me about $4! Can’t beat that.

This new job has me nearly asleep by the time I get home from work and Healthy Comfort Food, which is the theme this week, is just what I needed. The Beer Braised Pork Cutlets took about 20 minutes to cook in total and was also easy clean up. My kids ate them happily and said they mainly tasted like Honey Mustard Chicken. I didn’t have the energy for a fight last night so I was glad. As far as I’m concerned this will be a twice a month recipe since it tasted great, was quick and easy, inexpensive and fight free. Check it out below.

TIME

Prep Time: 5 minutes
Cook Time: 15 minutes

INGREDIENTS

4 pork sirloin cutlets, tenderized, about 1/4-inch thick
4 tablespoons flour
1/2 teaspoon salt
1 teaspoon ground black pepper
2 teaspoons butter
1 cup beer
2 tablespoons cider vinegar
2 tablespoon prepared mustard
2 teaspoons brown sugar
2 teaspoons dill weed

DIRECTIONS

Stir together flour, salt and pepper and coat cutlets. In a large skillet over medium-high heat, melt butter to sizzling and add cutlets. Saute until golden brown on one side; turn cutlets and add remaining ingredients to skillet. Bring to a boil, lower heat and cover. Simmer for 6-8 minutes, until pork is cooked through. Remove cutlets to a warm platter, boil and stir pan juices until thickened; serve cutlets with pan sauce.

If you know me at all then you know I am anti-short hair and I don’t just mean for me and Karolyn. My 6 year old son has lovely thick wavy hair and Wyatt is well on his way to flowy gorgeousness as well. With all this long hair in the house it can get a bit unruly which is where Hot Tot comes in.

sweet potatoes, sweet potato fries, sweet potato products, healthy sides for dinner, healthy sides kids loveI’m always searching for the perfect side dish to go with dinner. It seems like I am serving the same blah thing with my meat and veggies every night. Problem is that by the time I get home from work I don’t have time to get too fancy. So stuffing or macaroni and cheese tend to be on the menu much more often than it should be. That is until I discovered Alexia All Natural Products in the freezer section of my grocery store. They look like a standard tater-tot, except they are obviously orange in color, even after you cook them, so beware of trying to pull a fast one over on the kids. I thought they were perfect with just a little bit of salt and pepper seasoning. No ketchup required for these because they are sweet and already loaded with flavor. I baked them in the oven. Be sure to cook for the full amount of time so they are crispy. For me, they were a little piece of heaven. I loved them. That being said, I don’t know that kids will feel quite as strongly about liking them as much as I did. Jason And Spencer Being Well Behaved!

People say I don’t post pictures of my children often enough. They are right and I really should. I thought I’d reintroduce you to Jason the 7 year old and Spencer the nearly 4 year old.

This picture was taken at Chili’s where they were being particularly well behaved. This isn’t common however usually at least one of them is upset and the other is lying down with his feet on the wall. I can’t make this stuff up folks.

So please sit back and enjoy a nice calm moment with me.
